Wade Murphy of SourceRock and Michael Chapyak, a master distiller, sought to establish a craft distillery that highlights "original style" gin and vodka. •e initial design group failed to impress them with its proposal; so general contractor Saunders Construction recommended Architectural Workshop, who presented an "elegant in- dustrial" approach that accentuates the original building. PRIOR RESTRAINT Architectural Workshop wanted to expose the brick, steel and concrete retained from the existing structure and con- trast them with natural materials, rich textures and simple pro les. Murphy and Chapyak decided not to destroy the building and searched for pieces of Webber •eater that they could keep alive, such as the original marquee discovered intact underneath the Kitty's South signage. "•e previous company was focusing on creating more of a sterile environment and standard distillery area," says Mark Bowers, principal of Architectural Workshop. "Certainly, some of the existing building conditions were not being incorporated into the design. •ey were just kind of going to cover everything up [so that] you just walk into a white box, and there's your distillery." Existing masonry walls would not meet load require- ments for a new roof, so the rm placed pairs of columns strategically to support the original steel trusses.
